This coffee was crafted specifically for the summer season: a cold brew designed to be the perfect companion on hot days. Our Charming Beans edition doesn’t strive for flawlessness — it aims to be authentic, exciting, and memorable.

The Paraiso variety, processed naturally and anaerobically, delivers exactly that: a dense, juicy texture with flavours reminiscent of cooked berries, subtle notes of Kahlúa (a rum-coffee liqueur), complemented by an elegant, sparkling wine-like acidity. Paraiso is the result of deliberate breeding, perfectly suited to higher-altitude tropical terroirs. Yet, its true magic comes from the dedication and personal touch of the farmers, who put themselves into this coffee plant — making it a complete and truly wonderful whole.

About the Farm

João and his wife Neneia started building Fazenda Santo Antônio from the ground up in 2002. The farm’s name honours Neneia’s deep religious faith. João comes from a family with generations of coffee growing experience and is equally at home in the field as in the Sancoffee lab, working as a skilled cupper.

In 2008, he helped establish AFASA, a cooperative supporting smallholder farmers with better access to specialty markets. As part of the Beyond Borders program, João’s microlot has become a gem of the region — combining smallholder quality, on-site processing, and terroir to produce a distinctive and memorable coffee.

About the Region

Campo das Vertentes lies at the heart of Minas Gerais, Brazil, where mountainous terrain meets two watershed areas, creating a unique microclimate and fertile soil. Known since the 19th century for its excellent Arabica coffees, the region’s character was shaped by the traditions of the “tropeiros” — mounted muleteers who transported coffee across mountain trails for centuries, deeply influencing the culture and economy of the area. This rich heritage and natural environment give Campo das Vertentes coffees their unique profile, protected by a geographical indication to guarantee quality.

The magic of cold brew — the art of slow, cold coffee extraction

Cold brew traces its origins back to 17th-century Japan, where coffee beans were steeped in cold water. Today, cold brew is increasingly popular in the specialty coffee world for its smooth, fruity, low-acidity, and highly caffeinated profile — offering a refreshing and gentle alternative to hot coffee.

How does it differ from iced coffee?
Unlike iced coffee, which is espresso served over ice, cold brew is made by steeping coffee grounds in cold water for 12–24 hours. It typically contains more caffeine than espresso, making it a powerful yet smooth energiser.

Barista tip: It’s an excellent substitute for espresso in espresso tonics, great for iced Irish coffees, or even nitro coffee infusions.

Basic cold brew recipe: 

Use 100 g coarsely ground coffee (800 microns) and 1 litre of cold filtered or spring water. Stir together and refrigerate for 16-18 hours. This slow cold extraction results in a smotth, sweet, balanced drink with low acidity and no bitterness. After steeping, strain carefully and dilute to taste with water or milk. Serve on ice.  

Summer Recipes

Bonbon Cold Brew

  • 200 ml cold brew
  • 30 ml condensed milk
  • Ice cubes


Pour condensed milk into the bottom of a glass. Fill a shaker with ice and cold brew, then shake well. Strain the coffee over the condensed milk. Add ice cubes and enjoy your refreshing drink!

Amaretto Affogato

  • 30–45 ml cold brew
  • 30 ml amaretto liqueur
  • 1 scoop vanilla ice cream
  • 3 coffee beans (for garnish)


Add amaretto to cold brew and shake with ice. Place ice cream in a glass, pour the coffee mixture over it, and garnish with three coffee beans symbolising health, wealth, and happiness.

Charming Espresso Martini

  • 35 ml cold brew
  • 45 ml aged rum
  • 15 ml Kahlúa coffee liqueur
  • ½ tbsp sugar
  • Pinch of salt
  • Ice
  • Freshly grated nutmeg (for garnish)

Chill your glass with ice. In a shaker, combine rum, coffee liqueur, cold brew, sugar, salt, and ice. Stir until the sugar dissolves, then shake well. Remove the ice from the glass, double strain the cocktail into it, garnish with nutmeg, and serve immediately.
